The speed controller is also found from Radio controlled suppliers.

I need to calculate the size I will need from the Motor specifications and voltage I plan to run the system on.

          Power (watts) = Current (amp) X Voltage (volts)

Motor power 7000 watts

Voltage  44.4 volts

                     Current = power 7000 / 44.4

                     Current = 157 Amps

So the speed controller will have to be able to handle this.

The speed controlller found below can handle 200amps continuous running, this is also  from the large Radio controlled plane scene.
